Lovely family from Barcelona

Welcomed 7 dishes cooking in my new kitchen in June. I have welcomed my first guests for my new house. Our family have just moved in the house 2 weeks before the class.


They all enjoyed cooking, I felt like my friends family visiting my house. In the picture, they are now start to roll up thin sliced beef with vegetables, such as asparagus and carrot. Asparagus is now in season in Japan and this is easy to get any local grocery store in the world.



We cooked 7 dishes at the class


  • Sliced beef rolled up with asparagus and carrot

  • Pan seared eggplant and Japanese pepper with miso sauce

  • Agedashi-dofu, fried tofu with thickened dashi stock with minced shrimp

  • Miso marinated Spanish makarel

  • Bonito sashimi with Japanese herbs

  • Cucumber with cream sesame sauce

  • Rice cooked with corn

  • Miso soup

Everybody did a great job!


It is difficult to cook the same menus at home, because even I don't cook 7 dishes for everyday's meal. I hope you will cook some of the dishes at home.

Beautiful Japanese dishes and the table decoration

I was just impressed and screamed "Wow!" when I saw this picture which was sent from a lady by email just took my class a week before. It seems like a restaurant, but even somewhere heart warming food and lovely atmosphere. The table expresses her mindful life and her sense of beauty.


I believe it is not easy to get Japanese ingredients in her local grocery store, but she prepared all the right ingredients for the cooking.


One of my purpose to teach Japanese cooking for Japan tourists is to recognize cooking Japanese food is easier than people expect.


Many people from the world love Japanese food and they visited to Japan because the foods are delicious. Even though not many people haven't cooked Japanese food at home, but experienced to taste them in Japanese restaurants.


There is no big difference between restaurant food and home style food. Cooking at home is even healthier and inexpensive than food in restaurant. So I'd love people cook easy Japanese food at home.


Those are basic seasonings for cooking


Miso

Soy saue

Mirin, can be substituted for honey

Rice vinegar


Those seasonings are all fermented food and enable the ingredients better texture and tastier. So it is important to choose right seasonings at the begging of cooking.


The picture encouraged me to teach Japanese homestyle cooking more enthusiastically.

I hope she's been still enjoying cooking new Japanese dishes.


It was a beautiful day in late May. A couple who are Japanese food lover, both taste and cook, visited my cooking class.


Since I got in touch with them by email beforehand, I knew they have open mind for every Japanese ingredients and dishes, and eager to try unique seasonal dishes.


It is very important to know what the students want to learn/cook at the class, more precise become better result in my cooking class.


I have picked up several seasonal ingredients and cooked together. They both did great work and very efficient work at my small kitchen.


I liked to conversation with them, like what they usually cook for dinner and what they eat breakfast... something cooking background of the people from the world.



They really want to know what the exact ingredients to cook Japanese food.

I usually recommend to buy those seasonings.

*Soy sauce

*Sake

*Miso

*Mirin

*Rice vineger


They really enjoyed the food at the class and leave the message that the lunch was the best food during their stay in japan! I appreciate it!


Surprisingly, a couple of days later, I got a email with pic from the couple, they got right ingredients in their area, near Perth.




Amazing! You could get the seasonings seems good quality. I believe the lady will cook great Japanese dish near future.


More surprisingly, I god cooking report in a couple of days later....
