It This summer is hotter than usual in the end of August. The temperature in Tokyo is around 32 ℃ and 50 percent of humidity in these days and it's been uncomfortable days.
We, Japanese are looking forward to see horse macerals on grocery markets. This is the sign of the beginning of Autumn and feel like no more hot days.
The mackerel has good flavor, nutritious with good fat, easy to prepare and inexpensive price so this fish is very popular from the end of August to around in November.
Most of the Japanese kitchen furnishes the grill under the stove top since we grill whole fish often. I also cook chicken, egg plant and even pizza in this grill. It works very well.
About 10 min late the fish has done with golden brown colored. The heat from upper and the bottom in the grill cook the fish completely.

Since I used to work as a flight attendant, I had visited many cities in the world. I often go for dinner with crew and enjoyed local foods in restaurant in the world.
We sometimes visited Chinese restaurant because we could find easily and sometimes miss Asian food during our stay.
There are some kinds of Chinese food in the world. We enjoyed Dim-sum in London and New York City, local seasonal food such as Shang-hai crab in Hong Kong and fine Chinese dining in Singapore.

Recently I went to a Chinese restaurant " Ginza Aster". There are some branches in Tokyo and it has been popular years and my father's favorite restaurant. The restaurant is very busy during lunch and dinner.
Peking duck wrapped with thin flour crepe. The duck is traditional way, served only crispy duck skin.
This is an impressive dish for summer specialty. Shrimps and sun dried tomato cooked in chile sauce served with crispy fried rice.

I'd love to share Japanese Shojin ( vegetarian) restaurant in Roppoingi.
Restaurant shojin offers the menu of Shojin cuisine. Shojin means food that Buddhist priests cook for dairy meals. The cooking doesn't require any animal proteins.
However, the regular meal is used traditional dashi stock, which contains bonito flakes infused soup. If you make a reservation in advance for vegan menus, the chef will make dashi with vegetable stock.
This place I'm sure the vegetarians and vegans enjoy authentic Japanese food.
Shijin Sougo reantaurant
I visited Hida-Takayama with my family in this summer. I've heard from people in my cooking class how beautiful traditional city and food is amazing. So Hida had been my wishing visiting list for years. Finally I could visit there as my family trip and indeed, that was beautiful city!
We first visited a small town named Furukawa-machi in Gifu pref. The town is now known for one of the main location in Japanese anime movie " Your name". The main cast lives this small town.
There is clean stream around the town and carps swill slowly in the water. Although it was hot and humid day the water looks cool down the town.
There are some authentic Japanese candle shops around Hida area. I bought this candle holder for our living room.
The accommodation we stayed was amazing. The building is elegant, the service is super and food was ultimate!
The ryokan name "Hidatei Hanaohgi".
There are many foreign visitors, I believe the service is English friendly.
Dinner was served as kaiseki style.
The chef came from Kyoto, so the food was Kyoto kaiseki influenced.
We enjoyed Hida beef and every dishes at dinner.
We, Japanese women say staying ryokan is the most appreciate experience. Since we can take huge public bath, dinner is served at relaxed room. We don't need to think about wash and clean the dishes, moreover no worry about clean the dishes and the breakfast for next morning.
I really enjoyed staying beautiful ryokan there at Takayama.

I have welcomed French young guys for sake tasting class this afternoon.
Although they said they are Sake beginners, finally they knew the taste differences and enjoy each flavor of sake labels. They all have a great sense of the tastes.
I'm so glad more people understand sake as Japanese food culture and become interested in sake.
You will taste 4 different types of sake and know those characteristics. Then small sized food will be served and experiment what type of sake go with food. I also give you idea how to pairing sake and food. The food are simple, but commonly served with sake. People today enjoy common and traditional food as well.

Have you heard Japanese fermented food "Natto"?
chocolatier Jean Paul Hevan produced novel and unconventional chocolate bar in this summer, which combines chocolate and natto.
Natto is fermented soy beans. Those are slimy, and has strong flavor and unique smell. Natto is served with soy sauce and Japanese mustard, and we eat them mostly in breakfast.
First, add soy sauce into Natto, stair with chopsticks well then pour on top of a bowl of rice.
Some people in my class asked me about natto that they encountered in the breakfast at ryokan or restaurat. People are interested in the food which looks like soy beans, but never known how to eat them.
I serve them natto to taste at the class if the people interested in natto, and after taste, most people like the taste and of course not all the people like the strong flavor.
Some people describe the taste as caramel flavor, soy bean taste and cheese. The flavor goes with cooked white rice.
Natto contains tons of nutrition which include thrombolytic and probiotics and lower the blood pressure. We eat natto not only for the acquired taste, but also eat as healthy food.
So let's get down to the main issue. World well know chocolatier, Jean-Paul Hevin
produced tablet chocolate which contains dried natto crumbles.
I couldn't imagine the taste natto x chocolate, but it is not that bad, more like I was going
to be addicted to the taste. There are mixture of dried caramel, a bid of salty flavor and dried natto scattered over the chocolate. I like the crispy texture.
As someone in my class said the taste of natto is similar to caramel, so that caramel crumbles flavor go with natto. Yes, I like it!
