Japanese food culture, Food event in Tokyo, Japanese unique ingredients and classes
Every one enjoy making a sushi platter.!
We have welcomed a family originally from San Francisco. They have been traversing the world and currently staying in Tokyo and will travel through Japan. The family wanted to learn Japanese food culture and cooking technics in my class.
First, the sushi class starts with making sushi rice. There are several technics and tools to make nice vinegar flavored, and moderate moisture sushi rice.
Then cook Japanese style omelet. The participants use special rectangle egg omelet pan in our kitchen, some people call ' tamago pan', to make rectangle shaped omelet. See the boy made egg omelet successfully! The egg omelet will be cu in strip and will be one of the ingredients of sushi roll.
You may find many cooking tips in the class. Many people have no confidence to make sushi rolls at the beginning of the class, but there haven't have any failure so far.
Eventually the family made a sushi patter, sushi roll, inari-zushi and salmon aburi-zushi at the class and enjoyed their lunch with delicious sushi.

Typically, the space is filled with moms who just sent their children to school and have spare time for once for a while breakfast with chatting, like I did.
The most fascinating menu is Japanese style morning plate. There are 18 kinds of tiny dishes come with warm congee and miso soup in a tray, this is the traditional Japanese breakfast style which is similar to the meal served in ryokan accommodation. This is one of Japanese food culture to be served big breakfast in restaurants and Japanese accommodations. Some people in my cooking class ask that does Japanese people eat such a big breakfast daily, but I would say our breakfast is vey simple at home, but when we go out, we enjoy big breakfast.
In Typical life style of house hold in Japan, we spend busy time in the weekdays morning. The moms prepare breakfast and lunch box, we call bento box for the family in the morning after wake up, we spend super busy time until family leave home.
I believe the place is also desirable for tourists, because you can try many different Japanese healthy homey taste with nice and calm atmosphere.
The menu is not only for the breakfast. See the sweets varieties! The café opens from 8 am to 9 pm. There are lunch menus and other meal options as well.
I have welcomed two men from UK for sake tasting class in Tokyo.
It was their first time to taste sake and I was very exciting to introduce to their first sake.
I have met many Japan visitors from the world in my cooking class who haven't tasted Japanese sake during their stay. I would highly recommend to taste sake for those people to know how sake is wonderful local drink which is great to drink with food and also drink itself.
As you may enjoy drinking and experiencing French wine with French food in France, Drinking sake in Japan with Japanese food is great way to more understand about Japanese food culture and enjoy Japanese food.
The class is not only learning sake products and those tastes, but also how the food influence on sake taste in your mouth also vice versa.
Today's participants gave their expressions about the taste of sake very well, and expressed how does the sake taste and texture influenced on the taste of food.
This session is kind of experiment. I give some clue to match 4 different kinds and taste of sake and 5 kinds of food samples, but the participants can try any combination what they want to. There is no correct answer. We enjoy to exchange of opinions of the taste and deepen the understanding of sake.
I'm always glad to hear the participants enjoyed the pairings and eventually like Japanese sake and willing to try sake during the stay.

Since I've been giving cooking class for 2 and half year, this is the first time to welcomed people from Slovenia. I was so curious the food culture in Slovenia.
Slovenia is a mall country next to Italy, and there are abundant vegetables and seafood in the country. Event though there are many kinds of fresh seafood, they don't eat them row, always prepared and served the dishes.
This is a food samples to taste with sake. The food are common Japanese food and you can buy them most of the groceries. I'm always so glad to hear the guests find something new taste.
Some food are the first taste for the ladies. I'm happy to share my favorite food with them!
Summer holidays was over. My sons went back to school. Now it's time to get prepare bento box in early morning.

They are very polite and listened my lecture carefully. There are 4 types of sake and can be tasted with instruction.

After the process of tasting each sake, we enjoy talking about food culture differences.
Now I knew the most common alcohol among young people is fruits cider. Sound yummy!

Have you heard Yakiniku, which is indoor BBQ often grill small bite size Beef, but also there are Pork and chicken on the restaurants' menus.
Grilled on charcoal heat then dip several sauces. The meat goes well with beer. Grilled meat is super treat food for everyone.
I just heard from Israeli, Yakiniku BBQ is now popular among the people who visit Japan.
The beer glass is served frozen! I can't get enough of it.
This thin sliced one is beef tongues.
We eat it with specific soy sauce based yakiniku sauce or salt added fresh lemon juice.
Yakiniku is one of the food I'd like you try while you are in Tokyo.
There are many Yakiniku restaurants in Tokyo.
Ventilation system in each restaurants are great, so you will not get the smell from the grill.
I recommend you try Yakiniku while you are in Tokyo.
I've heard "Arakicho" in Yotsuya area, my neighborhood, but have never visited there.
Arakicho is well known for a bar district. My family has early bird life style so I prefer to stay at home in the evening.
Today, I was walking around with my son, who likes do magics. I've been wanted to bring my son to a magic bar in Arakicho.
While we were looking for the magic bar, we walked through cozy alleys in the district and encountered many impressive science there.
The day was held local bon dance festival. I heard the special music somewhere around the area. My son and I saw the little shrine with beautiful lanterns with foxes. This shrine is for a god of harvests, later business.
Many lanterns decollated along the street. There are many bars, Izakaya and casual restaurants in the street.
I saw on TV about the bar named Vowz bar before. The bartender and the staff are all priests and they serve the drinks and also talk with the guests.
The TV show introduced the bar very fascinatingly. I will visit next time.....
Finally we found the bar at the corner of the little building.
We saw stunning magic show and individual table magic. My son was so exited to the magician!

Magic bar kakurenbo in Arakicho
It This summer is hotter than usual in the end of August. The temperature in Tokyo is around 32 ℃ and 50 percent of humidity in these days and it's been uncomfortable days.
We, Japanese are looking forward to see horse macerals on grocery markets. This is the sign of the beginning of Autumn and feel like no more hot days.
The mackerel has good flavor, nutritious with good fat, easy to prepare and inexpensive price so this fish is very popular from the end of August to around in November.
Most of the Japanese kitchen furnishes the grill under the stove top since we grill whole fish often. I also cook chicken, egg plant and even pizza in this grill. It works very well.
About 10 min late the fish has done with golden brown colored. The heat from upper and the bottom in the grill cook the fish completely.
Grilled horse mackerel served with grated daikon radish for refresh flavor. the fish goes with cooked white rice.

Since I used to work as a flight attendant, I had visited many cities in the world. I often go for dinner with crew and enjoyed local foods in restaurant in the world.
We sometimes visited Chinese restaurant because we could find easily and sometimes miss Asian food during our stay.
There are some kinds of Chinese food in the world. We enjoyed Dim-sum in London and New York City, local seasonal food such as Shang-hai crab in Hong Kong and fine Chinese dining in Singapore.
I highly recommend High quality Chinese restaurants in Japan. The ingredients are seasonally fresh and amazing cooking technique result in sophisticated Chinese dishes. Also the hospitality service make you impressive experience.
Recently I went to a Chinese restaurant " Ginza Aster". There are some branches in Tokyo and it has been popular years and my father's favorite restaurant. The restaurant is very busy during lunch and dinner.
Peking duck wrapped with thin flour crepe. The duck is traditional way, served only crispy duck skin.
This is an impressive dish for summer specialty. Shrimps and sun dried tomato cooked in chile sauce served with crispy fried rice.
Cold green noodle served like cold ramen noodle.
Cold tapioca and fresh fruits in coconut milk.
Every dishes are served perfectly!
